Can y’all tell that I really love spinach and artichokes together? Haha. We’ve had quite a few recipes with the combo lately, but that’s because they’re all so wonderfully delicious! Artichokes are one of my favorite pizza toppings. Seriously, if you haven’t tried it, you should. It’s delectable.
We all know about the wonder that is homemade mac and cheese. In fact, I really wish that I had found this recipe for my kids at the school. They would have lost their minds at the creamy goodness that comes with having three cheeses instead of just cheddar.

This recipe is really just a white shell mix jazzed up. It’s so simple! You can also use whatever pasta shapes you like, whatever white mac and cheese box brand you like. I personally really enjoy Annie’s. The kids that I babysat forever always had Annie’s. We’d chow down on that stuff together. Super GOOD!

- 2 boxes Horizon Organic Pasta Shells & White Cheddar Cheese
- 5 oz. chopped frozen spinach, thawed
- 1 c. canned artichoke hearts, chopped
- ½ c. shredded smoked gouda cheese
- ½ c. grated parmesan cheese
- ½ tsp. garlic powder
- Prepare Mac & Cheese according to package instructions
- Add remaining ingredients and stir to combine
