One of my friends came over last night, and we cooked. We’re cooking buds. We’ve made quite a few dinners together, and they’re always fantastic. I love it when he comes over! Last night’s dinner was this amazing onion and mushroom red wine reduction over steak with rosemary garlic roasted potatoes and herbed Brussels sprouts. We enjoyed it with some wine while we sat on the couch (because we’re classy like that) and watched a movie. I don’t get many of these fun, stress free nights, and I’m so grateful to have had the opportunity!
This meal is absolutely fantastic. I can’t believe how good this sauce is. My SO isn’t a fan of wine, but I made sure I didn’t eat all of dinner so that he’d have some to try when he got home. Even my wine hating boy loved this meal!! It’s a winner for sure.
Starting in a couple of weeks, I’m going to be teaching 8th graders about cooking, budgeting, and general life skills in the kitchen. I am absolutely thrilled! If there’s anything that cooking has taught me, it’s that there is really no better way to build community, good vibes, and love! This meal of onion and mushroom red wine reduction over steak with roasted veggies just sort of cemented that. I love cooking, and I love it even more when I’m sharing it with my family and friends.
- 2-4 steaks depending on size
- 1 shallot, minced
- 3 cloves garlic, minced
- 1/2 medium white onion, chopped
- 8 mushrooms, sliced
- 3 Cups red wine
- 2 Tbsp olive oil
- 1 tsp basil
- salt and pepper to taste
- 1/4 tsp allspice
- Heat olive oil in a pan over medium heat.
- Add in garlic and shallots. Cook until fragrant
- Add in salt, pepper, basil, and allspoce
- Add onions and mushrooms. Cook until onions are translucent.
- Add wine.
- Let simmer until liquid is reduced to 2-3 tbsp.
- Serve over steak
- Cook your steak to your preferred doneness.
- Serve and enjoy
