I’ve said once, and I’ll say it again, there is no food I love more than Thai food. My SO and I go out once or twice a week for Thai food. It’s used as our comfort, congratulatory, and even just we’re hungry food. There is no time when it doesn’t sound absolutely terrfic.
This Thai stir fry sounds amazing. I think I need to try it some day. We might even be able to sate our Thai cravings with this and save so much money!
I love the flavors that are used in Thai food. The peanut sauces, the sweet chili, the ginger, the basil! I just love it all, then when they combine it. Oh, yessssss. You really can’t go wrong with this one. One ogreat thing about this dish is that it’s a stir fry, which means it’s a super quick dish and so worth it!

Ingredients for Thai Stir Fry
- 3 tbsp crunchy peanut butter
- 3 tbsp sweet chilli sauce
- 2 tbsp soy sauce
- 300g pack straight-to-wok noodles
- 1 tbsp oil
- thumb-sized piece of fresh root ginger, peeled and grated
- 300g pack stir-fry vegetables with peppers and mangetout
- handful basil leaves
- 25g roasted peanuts, roughly chopped
