I recently posted a recipe for chicken adobo that is in more of a soup form. This grilled chicken adobo sounds so interesting to me. The first time I had adobo was last year. It was the first dish that my SO cooked for me. I must say that first attempt wasn’t very good, but we figured it out, and now we make awesome adobo together.

Chicken adobo is a really delicious meal, and it is so simple. It’s really just soy sauce, vinegar, bay leaves, and garlic. I’m interested in how a grilled chicken adobo works and how it would taste. As I do not have a grill, I think I may need to go find a grill pan specifically for this!

Ingredients for Grilled Chicken Adobo
- 3-4 lb chicken pieces (drumsticks and thighs)
- ½ C soy sauce (see notes for gluten-free suggestion)
- ¾ C white vinegar
- 3 cloves garlic, crushed
- 2 bay leaves
- 1 Tbsp whole peppercorns
