Spicy Beef Turnovers

Foods that you can eat with your fingers can be highly satisfying. It’s not just because they taste good and fill you up in just a few small bites. It’s also because they’re basically fuss-free dining – you don’t need to bother with your fork and knife, and no one at your table will really care if you lick your fingers in delight because they’d be doing the same.

These spicy beef turnovers are perfect in that respect. You can satisfactorily eat them with your hands, and you will get to lick your fingers in delight. These turnovers are also quite versatile in that you can serve them as appetizers at your dinner party, put them in your packed lunch to take to school or work, or enjoy them as the dinner entrée itself. Also, they taste delicious.


For the dough:
1 egg
2 TBS milk
1/8 tsp. salt
2 ¼ cups sifted flour
1 ½ tsp. salt
½ cup cold butter — sliced
1 TBS cider or white vinegar
1/3 cup ice cold water

For the filling:
3 TBS oil
1 medium onion — finely chopped
2 garlic cloves — minced
2 chipotle peppers in adobo — chopped
1 pound ground beef
¼ cup peas
½ large carrot — finely cubed
½ large potato — finely cubed
3 Roma tomatoes — peeled and finely chopped (you can use canned)
10 black olives — chopped
½ TBS crushed oregano
Salt & Pepper
½ cup water
1 egg with a slash of cold water
Chipotle powder
