Easy Ratatouille

Have you seen the movie Ratatouille? If not, you should pick up the DVD and go watch it with your family. One of the best scenes there is how the pompous food critic Anton Ego came down to the main character’s restaurant to give the food a review. The snotty critic turned up his nose when he was served a plateful of ratatouille, but after a small bite, he suddenly remembered a happy event in his childhood when his mother served him ratatouille. The supposedly homely plate of vegetables in sauce turned Anton Ego into a more caring person.

Ratatouille is really a good dish to learn. It may be a simple and rustic dish, but its flavors are divine. It’s comfort food that will warm your heart and it’s good for your body too. Watch the video on the next page for an easy ratatouille recipe.

Ingredients

1 zucchini
1 japanese eggplant
1 yellow squash
1 red onion
2 vine ripe tomatoes
4-5 tbsp tomato paste
1/2 cup water
2 tbsp olive oil
1 tsp chopped thyme
2 tbsp minced onion
1 tbsp sliced garlic
2 tbsp diced chili pepper (bell or spicy)
2 tsp smoked paprika
salt & pepper to taste
