This chunky taco soup is very easy to make, so you can enjoy it for dinner even when you got home quite late and don’t have much time to cook. You just sauté garlic, onion and bell peppers in a stock pot, add the rest of the ingredients, and then allow to simmer for 45 minutes. 1/2 lb. lean ground beef
2-3 garlic cloves, minced
1 sweet onion, diced
1 large bell pepper, diced
28 oz. can of tomato sauce
1/2 c. chicken stock
15 oz. can of corn, drained
15 oz. can of black beans, drained
2 tsp. cumin
2 tsp. chili powder
1/2 tsp. paprika
1 tbsp. cilantro, chopped
1 tsp. sugar
small dash of cinnamon
squirt of Sriracha
olive oil
