Homemade Strawberry Syrup

A Belgian waffle with strawberry syrup and whipped cream were my favorite thing as a child. I remember eating at Shari’s as a kid, and I loved going there because they served breakfast all day long, and my mom would sometimes let me order a waffle with strawberry syrup and whipped cream for lunch or dinner, and sometimes she’d let me get a hot chocolate! Oh, it was the best as far as I was concerned.

Isn’t it funny how so many of our memories and social situations surround food and the feeling we had while enjoying or hating said food? Humans are interesting creatures.

If you’re looking for a way to make a yummy childhood waffle like strawberry syrup and whipped cream waffles, this is the recipe for you!

This is like a slice of heaven for me. We really love this recipe in my household, and with only 3 ingredients, it’s super simple to make.

Homemade Strawberry Syrup
  1. 1 cup strawberries hulled and chopped
  2. 1/2 cup water
  3. 1/4 cup sugar
  1. In a small pot, cover strawberries with water and simmer for 10 to 15 minutes, until water is bright red and strawberries are dull.
  2. Strain the juice from the strawberries through a fine mesh strainer and discard the strawberries.
  3. Wipe out the pan, return juice, and add your sugar.
  4. Simmer, stirring occasionally, for 5 to 15 minutes*, until syrup is thickened and reduced to about 1/2 to 2/3 cup. Syrup will seem a bit runny at this point, but will thicken as it cools.
  5. Store in an air-tight container for up to 2 weeks.
