Blueberry Coffee Cake

I love a good slice of coffee cake in the morning. The crumble on top. The batter-y goodness of the center. Blueberry coffee cake though? It’s my favorite.When the blueberries are fresh and ripe, they just explode in your mouth.

This would be a delicious breakfast snack for the office or for your family! 

I remember when I was little, I never wanted to try coffee cake because I thought it was coffee flavored. I’d tried my mom’s coffee (dark roast, black), and it was awful. There was no reason for me to try a cake flavored like that. I’m so glad my mom finally tricked me in to trying a coffee cake.

Blueberry Coffee Cake
  1. 1 1/2 c. unbleached all-purpose flour
  2. 1/2 c. cornmeal
  3. 1/2 tsp. aluminum-free baking powder
  4. 1/2 tsp. baking soda
  5. 1/2 tsp. kosher salt
  6. 8 tbsp. unsalted butter, room temperature
  7. 1/2 c. maple syrup
  8. 2 large eggs
  9. 2/3 c. plain whole milk yogurt
  10. 1 tsp. pure vanilla extract
  11. 3 c. fresh blueberries
  1. 1/2 c. rolled oats
  2. 1/2 c. pecans
  3. 2 tbsp. maple syrup
  4. 1 tbsp. butter
  5. 1 tbsp. flour
  6. pinch of salt
  1. Preheat oven to 325 degrees. Prepare 9" cake pan or two 6" cake pans. Set aside.
  2. In a bowl, whisk together flour, cornmeal, baking powder, baking soda, and salt. Set aside.
  3. In another bowl, cream together butter and maple syrup until well combined and pale in color, about 3 minutes. Beat in egg, yogurt, and vanilla until just combined.
  4. Add dry ingredients and beat until just incorporated. Fold in blueberries and evenly distribute in pan, smoothing out the top. The batter will be on the thicker side.
  5. Make crumble by combining all the ingredients until evenly combined. Top cake.
  6. Bake for about an hour. Halfway through, cover cake with foil to keep crumble from over-browning.
  7. Allow cake to cool in pan at least 20 minutes before removing and serving
