Berry and Granola Yogurt Parfait

The first time I ever had a yogurt parfait was one of the yogurt parfaits from McD’s when they first came out in like 2000. I thought it was the best thing ever. My mom allowed me to eat those instead of a value meal. For like a split second they filled my growing body up enough to not need more food. But alas, I realized I needed more food than that so I stopped getting them.

The best part about these yogurt parfaits is that they are fairly healthy, and you know what you are putting in them. 

These are advertised as desserts. Why not have these yogurt parfaits for breakfast? They look like a great breakfast. Make a few ahead of time, and then have them in the fridge for later. Just make sure to save that granola for when you’re about to eat it. Soggy granola isn’t the best.

Berry and Granola Yogurt Parfait
  1. • 8,8 oz (250 g) of fresh berries
  2. • ¼ cup (50 ml) of water
  3. • 1 ½ tbsp (20 g) of sugar
  4. • 2 tsp of corn starch • 2 ¼ cups (450 g) of Greek yogurt
  5. • 1 big tbsp of honey
  6. • 3,5 oz (100 g) of crunchy granola
  1. Begin to prepare the berry coulis, to allow it to rest in the fridge for at least 20 minutes. Put the water, the berries and the sugar in a small saucepan on a low flame... and stir until the berries are mushy.
  2. Strain the berries through a colander to remove any seed. Now add the corn starch, which has been melted in a very little water... stir... and put on the stove again until the mixture has thickened.
  3. Our coulis is ready, now pour into glass cups... and put in the fridge to cool for 20 minutes.
  4. In the meanwhile, we'll prepare the yogurt cream. Pour the honey into the yogurt... and stir until you have a creamy mixture.
  5. Now that our coulis is cold, we can divide the yogurt into the cups.
  6. Finish with a layer of crunchy granola on each cup... and garnish with fresh berries
